10 Eggs
½ lb Ground Chicken or Turkey Breakfast Sausage
2 cups Spinach Leaves
12 Heirloom Tomatoes (depending on size)
1 tbsp Italian Seasoning
Salt and Pepper (to taste)

Cook breakfast sausage.

Preheat oven to 350 degrees.

Spray a 9-inch pie plate with cooking spray.

Whisk eggs in a large mixing bowl.

Add sausage, spinach, Italian seasoning, salt, and pepper; stir to combine. Pour into baking dish.

Slice tomatoes and layer on top of the egg mixture.

Bake for 30-45 minutes or until eggs are set.

Divide into six servings.
