Zesty BBQ Crockpot
Yields4 Servings
 1 lb Chicken breast
 ¼ cup Recommended Italian dressing
 ½ cup Low-sodium chicken stock
 ¼ cup Feta cheese
 1 Red onion (small, chopped)
 4 cups Chopped zucchini
 4 cups Summer squash
 1.50 tbsp Olive oil
 1 tbsp Worcestershire sauce
 ¾ cup Recommended BBQ sauce
 Cooking spray
 Salt and pepper (to taste)

Place chicken in sprayed crockpot. Season with salt and pepper. Top with BBQ sauce, Italian dressing, Worcestershire, and chicken stock. Cover and cook on low for 6-8 hours or on high for 3-4 hours.

Preheat oven to 350 degrees. Toss zucchini, squash, and red onion with olive oil, salt, and pepper. Place on a baking dish and bake for 50-60 minutes or until vegetables are tender and slightly browned. Stir every 15-20 minutes.

For each serving, place 2 cups of vegetables on a plate and top with 3/4 cup BBQ chicken and 1 tablespoon of feta.
