Salmon with Cucumber Dill Sauce
Yields4 Servings
Salmon
 4 6oz Filets of Wild-Caught Salmon
 ½ Lemon
 1 tbsp Dried Dill
Dill Sauce
 ¼ cup Recommended Mayonnaise
 ¼ cup Sour Cream
 1 tbsp Dijon Mustard
 ½ cup Cucumber (peeled, seeded, and diced)
 2 tsp Dried Dill
Asparagus
 2 lbs Asparagus
 ½ Lemon
 1 tbsp Olive Oil
 ¼ cup Shaved Parmesan Cheese
 Salt and Pepper (to taste)
Dill Sauce

Mix mayo, sour cream, dijon mustard, dried dill, and cucumber together.

Let sit in refrigerator for at least 30 minutes. The sauce will be used after the salmon is done cooking!

Preparing the Salmon

Heat oven to 350 degrees.

Place salmon in a sprayed baking dish.

Squeeze 1/2 lemon over salmon and sprinkle with 1 tablespoon of dill.

Cook for approximately 20 minutes or until salmon is cooked throughout.

Preparing the Asparagus

Rub asparagus with olive oil.

Squeeze 1/2 lemon over asparagus; season with salt and pepper to taste.

Cook asparagus in 350 degree oven for approximately 10 minutes or until tender.

Top cooked asparagus with 1/4 cup shaved parmesan cheese.

Portioning

Divide into four servings. Serve each person 1 piece of salmon, 2 tablespoons cucumber dill sauce, and an equal portion of asparagus.
